Industrial oven door seals need to be cleaned and cared for on a regular basis. A wet towel every day can be run around the entire seal, which will get any debris off of it. If you let the dirt stay on there, the seals won't do their job.

If the door seals rip, tear or are otherwise not functioning properly, heat will escape from the oven. You'll then be heating the entire room, causing a higher electric bill because your air will be working extra hard. Another thing is that your food will cook unevenly and often longer because of the reduced amount of heat on the inside of the oven.

Door seals should be able to easily be replaced. Once the door to you oven is completely cooled, the seals or gaskets can be replaced. Some work as a giant rubber band on the inside of the door. Others need to be slid in using a tongue-in-groove format. Others will require you to get out a screwdriver. There are companies that will come and change your seals for you, too. Either method you choose, it will need to be considered so that your oven works properly.

When a health inspector comes into your facility, they will check industrial oven door seals. They'll check for a couple of things:

  • Accumulated dirt
  • Rips or tears
  • Areas that are more worn

These checks can mean several points deducted from your overall inspection score. To avoid these, you'll need to care for your door seals just like you care for everything else in your kitchen.

Cleaning the seals on a regular basis will ensure that you don't get a lot of dirt accumulating on the ridges of the deal. Crumbs, batter and other things can easily transfer onto the gasket as food is placed inside the oven. Over time, the dirt will wear down the rubber gaskets and lead to areas that are worn or rips and tears.

Rips and tears are a big problem as far as a health inspector is concerned. If your industrial oven door seals are torn, you'll have no choice but to replace them. That's because they are no longer a cleanable surface because crumbs and debris can get inside of them, causing a breeding ground for pests and bacteria. Rips and tears will also prevent your oven from sealing properly.

Worn marks on the seals will ultimately lead to a rip or tear. It also means that heat is transferring outside of the oven. When you've got wear marks in certain areas, you may want to have a repair technician look at the oven because it can also be due to a malfunctioning heat sensor.
